5 bean chili (serves 2)
okay im sorry this has taken me a week to actually put up
What you need:
1/2 can mixed beans in water
1/4 can kidney beans
1/3 can baked beans (the tomato sauce is good so get plenty of it)
1/2 can green lentils
2tbsp sweetcorn
1/2 can tinned tomatoes
1/2 white onion
1tsp olive oil
1 chili cube or 1tsp chopped chili
1tsp chili powder
1tsp paprika
1tbsp tomato puree (more if required)
1/2 yellow bell pepper
What you do:
Finely chop onion and fry in the oil for a minute, then add in chunkely chopped pepper and fry for a further minute, then add in all the beans and fry till they start getting slightly dry (2 or 3 minutes)
Add in the chopped tomatoes and stir well through, now add the chili, chili powder, sweetcorn, paprika and lentils and let it simmer for 10 or so minutes
Add in the tomato puree (enough to thicken the sauce, usually a tbsp work) stir well through and cook for another 2 minutes
Serve with rice or jacket potato (and vegan cheese on top if you like)
(im sorry i dont know the calories for this, i made my sister eat it so i didnt bother counting, probably around 350-400 calories)
